Lexington Love | A Taste of France at Le Deauville

Lexington Love | A Taste of France at Le Deauville - offbeat + inspired

Visiting Paris has been a dream of mine for as long as I can remember. Seeing Julie & Julia for the first time dug the well a little deeper, but the thing that pushed me over the edge into trip planning mode was moving to Lexington, Kentucky. It’s not a coincidence that two of the three “Lexington Love” posts I’ve done so far have been about French/European-inspired eateries. There’s an atmosphere and an old-world charm built into a French crafted experience that just can’t be matched. Dozens of restaurants in this city have phenomenal food, trendy interior design, friendly hosts and personality that instantly turns first-timers into regulars — but Le Deauville French Bistro at 199 North Limestone makes you believe you’re actually in France.

Lavender-Honey Iced Latte

Lavender-Honey Iced Latte - offbeat + inspired-7

I’m a little obsessed with making flavor infused simple syrups (as evidenced by the excessive number of my recipes that include them in some form). The flavor combinations are endless and, in my opinion, it’s one of the easiest and most fun ways to add variety to drinks like iced tea, lemonade, cocktails and of course, coffee.

Lemon-Basil Whole Wheat Coffee Cake

Lemon + Basil Whole Wheat Coffee Cake-3

They say breakfast is the most important meal of the day. Luckily, many breakfast foods are basically cake. Ergo, the most important meal of the day is cake. Flawless logic, right? I’m not quite sure how muffins, pancakes and coffee cake made the cut when it came to deciding which foods were socially acceptable to eat first thing in the morning, but hey, I’m not arguing.

This Lemon-Basil Whole Wheat Coffee Cake has all the fixings of a decadent treat, but you can get away with enjoying it any time of day. It’s topped with buttery, sugary crumbles and has a layer of creamy and tart lemon curd. Fresh basil and lemon zest give it a bright pop of flavor that’s perfect for the summer months. It’s also made with whole wheat flour and Greek yogurt, so you can feel even better about eating cake for breakfast.

Clean Eating | GF Spiced Sweet Potato Baked Donuts

Clean Eating | GF Spiced Sweet Potato Baked Donuts - offbeat + inspired

I’ve been Whole30-ing for the last week now, and I’m currently straddling the line between “what was I thinking” and “I can’t believe how obscenely necessary this was”. I’m smack-dab in the middle of the hangry phase, as detailed in the official Whole30 Timeline, and a new beast has recently reared its ugly head. The giant brownie hallucination. They don’t talk about this particular monster in the W30 description, but it’s very, very real. I’m restricted from having wheat, grains, legumes (including peanuts), added sugars (including agave and honey), all dairy and any kind of baked dessert (even if it’s made with W30-compliant ingredients!). This leaves that giant, wonderful, horrifying brownie as an amalgam of absolutely everything I’m not allowed to eat right now — which is probably why it’s attacking me in my sleep.

Coffee-Maple Candied Bacon

Coffee-Maple Candied Bacon - offbeat + inspired-5

What’s better than bacon? Candied bacon with rich, earthy flavors of coffee, sweet maple syrup, caramelized sugar and spicy black pepper.

This recipe is dangerously easy to make, with only a few ingredients: bacon, freshly roasted coffee (I like using a full-bodied, dark roast such as FreshGround’s Sumatra Aceh), sugar, maple syrup and a touch of black pepper. Word of advice? Make this in small batches - or at least have friends over to share the results with. Otherwise before you know it, you’ll have consumed a shameful amount of bacon all by yourself. (Yup, I’m speaking from personal experience.)

Coffee + Cardamom Zeppole

Coffee + Cardamom Zeppole - offbeat + inspired-4

In an effort to expand my cooking repertoire, I’ve been experimenting with new dishes, techniques and recipes. I don’t often make desserts, so I figured that would be a great (and tasty) area in which to step up my culinary game. The latest sweet treat? Italian fried doughnuts, also called zeppole. Yup - deep-fried, buttery, sweet dough covered in sugar. What’s not to love?

Banana-Rum Scones

Banana-Rum Scones - offbeat + inspired-5

Years ago over one of my winter breaks in college, my mom and I spent a week together in New Hampshire. While some of my friends traveled to warmer climates, I opted for snowy mountains. I had the chance to snowboard, my mom and I snowshoed and we soaked in the beauty of the outdoors. To top it all off, we made sure to enjoy incredible food.

While wandering around the local area, we came across a quaint little bakery selling freshly baked muffins, scones and other pastries. The scones they had there remain the best ones I have ever tasted in my life. Maybe it was the beautiful evergreen trees layered with sparkling flakes and the blanket of crunching snow under my feet that made a warm scone and a cup of coffee taste so amazing. Or maybe those flaky, buttery treats were special because they were a culinary discovery I shared with my mom. Whatever it was, that experience turned me into a scone lover.

Clean Eating | Broiled Grapefruit with Yogurt + Cinnamon

Broiled Grapefruit with Yogurt + Cinnamon - offbeat + inspired-9

I don’t mind the cold and snow during the beginning of winter, but around this time of year I start to get antsy. My love for cuddling up with comfort food in front of the fireplace gives way to a desire to eat on a restaurant patio, run along the riverfront path or head over to the neighbor’s for drinks and laughs around their fire pit.
